I was just thinking the clue might be of the crossword type
"Let's try to hunt / down / just one of them."
Just one of them could be "alone"
reversed that could be Enola
The Enola Gay?

57-63, castle rock....
Is it...diving off of something very tall (Castle parapets) into shallow lagoons at high tides and changing their appearance is a reference to poses like Pike or Tuck that "they" assume as they plummet. The ever popular "Kylie" (bum first) and "Domino" (being shoved off the ledge and falling face first)

If we take this at face value it suggests that the activity is not possible in the UK.
What isn't possible in the UK?
Sunbathing in December?
Growing pineapples outdoors?
Jumping off the world's tallest building?
Either something that cannot be undertaken because of the climatic conditions in the UK or something that requires a physical presence, a person, building or geographic object located outside the UK.
"Their appearance may change while they are doing it"
I can't believe that they turn into werewolves so the appearance might be costume driven, to engage in the specific activity requires equipment or uniforms.
"its something that few get the chance to do, and so some leap at it"
Is "leap" a cunning clue? Does it help if it is??
High and long jumping, diving and bungee jumping are all activities that can and do take place in the UK.

pebblederook - it would be possible in the UK, it's just that this particular case isn't.

Post 109, pebble is tackling the right clues, but not yet getting the right answers. "Leap" isn't a cunning clue, just the word I happened to use.

A Clue, and quite an important clue
It's not lots of different second jobs - it's the same type of job. That's why I said >>There's an activity that some people sometimes take part in<<
Identify the job, and then try to home in on one specific person.
And then wonder whether it was worth the effort.
