Next week I shall be having a cream tea every afternoon!!.
In the UK one can purchase frozen clotted cream. I wonder if you can get it in the States?

I haven't ever seen any clotted cream here, fresh or frozen. It was very good. I suppose I could buy some heavy whipping cream and take a stab at making some. It may be available in other parts of the US, though. The products for sale varies depending upon where you live.
I'm told that the best clotted cream comes from Devon. Lucky Helen and Chris!

Hi Hyp,
Did a bit of Googling for you to see if anybody exported clotted cream. Cream Teas are traditionally Devonian but all the clotted cream sites where situated in Cornwall. Hmm take your pick. All the postal sites only operate within UK but I did find this DIY recipe:

What marvellous links you have given Hypatia. I hope you od not mind but I have also filed them.
I had heard that the way to make it was to heat cream. But I know that it lasts a long time in the deep freeze so I always bring some back with us from Cornwall/Devon!!
Nice to read your homepage. How on earth have you mastered IT?

Well I always used various puters at work for many years and when I got a proper job at home the local college was running a taught module Masters so I just buckled down and got as far as a Post Graduate Diploma. I'm trying to work up some enthusiasm to go on to a full Masters.
You're more than welcome to the links, just stumbled over them. I remember sending some clotted cream back on a flight from Aberdeen. I thought the buttery top showed it was off.I know better now

If you can find cream with a milk fat content of greater than 52% you won't be able to tell the difference. In Australia 45% and 48% are common, but there is a small company now selling pure Jersey cream at >52%. That last 4% makes the difference between really nice cream and the can't-tell-the-difference cream.

In case you're still looking... I have been able to find clotted cream at our local natural foods market. I don't know if a big chain like Whole Foods would have it but I'd think so if our little Magic Mill has Devonshire Clotted Cream.

So far the heaviest cream I've been able to find has 40% butter fat.
Hi Hermi. I live in a small town in southwest Missouri. I often have dificulty finding products readily available in other parts of the country. Clotted cream is one of those things I can't find here. Lucky you to be able to buy it where you are.

Cream teas are indeed ludicrously calorie-stuffed. I saw some clotted cream in the local supermarket this week and nearly caved in, but managed to resist. Best saved for holidays, I think.

I am still unable to find heavy cream with the percentage of butterfat necessary for home made clotted cream. It's a conspiracy!

Dear Wandering Albatross,
Have just come across your reply. Well, after decisions, non-decisions. re-decisions re...etc. etc. I have decided to get a sspanking new RELIABLE new computer that I won't have to spend hours getting to work.
I had a marvellous computer in the eighties - I had to give it instructions - nothing like having these wretched preogrammes that I now have to try and conquer - and managed to design my own data bases using DBase3 . And the information was stored, kept, and because I had majored in Logic and Metaphysics I was able to design data bases which actually gave useful information!!.
Ah me! Ah my!
All I want now is a computer which will let me finish all the half started books I have and also enable me to surf the net and find all the valuable information which is floating around, and of course be in email contact with my friends.
perhaps I shall have some of your success I hope so and please wish me well!/
