Creme fraiche!
I've been experimenting with things other than double cream, and yes -it doesn't taste quite the same, but it's the closest (in my opinion) to double cream.
It also adds a little tang to the sauce which is really quite nice

Actually on a more serious note, I came up with a creamy version of pasta and pesto last night. I'd thrown the regulation half jar of pesto plus olive oil, black pepper and parmesan at a pan full of penne. When I realised that I'd got a bit of ricotta that needed using up, so in it went as well. The result was very very good, and one that will be done again
