My onions are now soaking in teh salt/water for 24 hours took me some time to get round to buying the onions
Bit of advice needed; as I'm not (this time at least) doing the boiling vinigar thinggy, just using the sarsons pickling vinigar (perhaps with a bit of the white wine vinigar I have), I was thinking... Can I drop a few cloves and peppercorns and a bay leave into the jar that the onions are being pickled in? or won't that work well, as the added bits will just be near one or two fo the onions?

I can't see why not although I wouldn't think that the effect will be quite the same as boiling them all up.

First jar came out pretty wlel though I think I should have left it longer before opening it and starting on them the second jar is now in the process of 'maturing' though this time I am going to leave it at least a month from when they entered the jar/vinigar until I open them
The first batch of onions were a bit too big and so that mighten have not helped them, but they came out pretty damn well I think
the second lot are really really relaly tiny 'pickling onions', organic ones I got from over the road
same way, soaked 24 hours in the salt/water, then into the jar, adding some cloes pepper corns and a few bay leaves, so far I've only used ordinary pickling vinigar, and not tried doing combinations with cider or other vinigar
I should get round to doing another jar this week or the beginning of next once I@ve some more vinigar
then I'll do some more later in the month, and try to get some of these that I'll then keep all the time till Christmas
by which time I recon they'l really blow your head off when eaten

This is only the very tentative steps on the beginning of a long dusty road to attempt to gain the title of pickling king after onions will come eggs, and after eggs will come red cabbage, and after red cabbage will come gerkins
though I want to get the onions totally right first; depending on how this second bunch comes out I may move over to the method involving boiling the vinigar with the 'flavouring stuff' in it first
then of course I'll need to begin experimenting on various differnt mixes of vinigars, at the moment I relaly want to try doing some sweet onions in some sweet vinigar, not sure which would be best hough
this may take me several years before I get to the egg let alone red cabbage stage

Don't forget the secret ingredient - root ginger!
For the best sweet variety try using some raspberry vinegar. Absolutely delicious.

(Faint is quite happy though, she enjoys a squeeze every now & then.)
