well used this reciepe and the results were fab!! Everyone says that they are the best homemade they have ever tasted. I won't bother with any other and stick to this one.

That is great! I am so pleased that you enjoyed the results. Did you make the straightforward version? Maybe next time experiment with a few flavours.

Hi all,
I had a go at these a few weeks ago, just cracked the jar and they are awesome. I was inspired initially to try my own pickled onions by a newspaper article about a pub landlord who claims to have the world's hottest pickled onions - I wasn't out to compete with his ghost peppers but I did like the sound of spicy onions. I boiled my vinegar with scotch bonnets and some firecrackers I grow on a windowsill. Also added extra pepper corns and some peeled, sliced ginger (which is also tastes great now). I kept all the extra bits with the vinegar in the jar
After reading a few other comments I was a bit concerned they might be too salty but not at all.
Very happy with the result - thanks for sharing the recipe.
