Hi,
I have just made the Pickled Onion recipe. Please could you tell me, should the onions be soft when they come out of the brine solution? I am concerned that they may now end up as a soggy onion rather than a nice crisp one.

They will feel a little softer than before they went in, but dry them well and the vinegar should soon harden them up again.
