Saturnine, calm down, it's quite easy.
SPOILER ------------------------------ SPOILER
* To get Cloud's, beat Ultima Weapon a few times (The black weapon that appears hovering over stuff.)
* Tifa's is in Wall Market you need a keycard to get into Midgar to get it.
I can't think of the rest right now, i'll post them up later. IF you've got weapons found later in the game you've got enough to beat him. He isn't quite as hard as people make out because his strength is relative to Cloud's level. Just make sure you can cast Full-Life (If you don't have life it's in Cosmo Canyon) and don't give up.
For eveyone else, you can actually leave the crater on Disc 3. Just climb back up and aboard the Highwind.

FF VI - At Atma Weapon
FF VII - 100% Completed (Even tested methods to get Aeris in Final battle, it is impossible.)
FF VIII - 100% Complete (Even beat Omega Wepaon in One attack (Note: 3 turns but 1 actual attack.))
FF IX - 100% Complete (Beaten Ozma)
FF X - 90% Complete (Still need to beat Dark Aeons etc.)
Kingdom Hearts - 99% (Only Sephiroth to Kill.)

It's a great big black dragon. It appears in random locations on the world map (usually above towns). If I remember rightly there are 3 fixed locations you have to fight it at.
Mideel. (This is part of the story.)
The Crater by Junon (Damned obvious when you fly past it.)
Cosmo Canyon (The last fight against him, the one you get Ultima Weapon from.)
Also of note is that it can cast the Enemy Skill Shadowflare if you need it.

but i recomend getting not only knights of the round on one charachter but copy onto a second one - double the attack wahey keeping one of your chars attacking with gfs most powerful to start with a second one copying and a third and weakest at fighting healing everyone at least for the final battle i always found the one just before harder but thats just me. but DONT YOU JUST LOVE THE MUSIC FOR THE FINAL BATTLE

well, 7 had a revolutionary 3d engine. and apart from that, the gameplay is excellent and those ugly rounded arms and legs don't bother you for long.

You really don't need Knights Of The Round or Ultimate Weapons to beat Sephiroth. First time I finished it I was at level 64 and didn't have the best materia combinations, just random stuff thrown together. Just keep healing your party with one character and have the other two pummel him. FF7 is one of the easiest Final Fantasies, if not THE easiest, so intense levelling up (lv.74 is the highest I've bothered to get to), Ultimate Weapons and hardcore spells and summons just make Sephiroth a cakewalk.
