Not to Blow My Own Horn, Or Anything. I have been challenged but never beaten at the ART of cooking hunks of stuff over fire. Anyone wishing to challenge need only set any stipulations they deem necessasary. . .
Recently, with a LEATHERMAN SUPERTOOL, some tinfoil, a ziplock bag and an axe, I prepared over a seriously raging fire:
SHREDDED PORK BBQ (Jack's betterthancarolinastyle):
ULTIMATE SWEET CORN ON THE COB:
YEEHAW POTATOES:
(And I'm not going to post the Tuna Sushi and Portabello LimeSatay Skewered hors'D just yet)
SHREDDED PORK:
BRING EVERYTHING LISTED ABOVE ALONG WITH:
A Pork Sirloin, I.E. a raw ham
Kentucky Bourbon
Tomato/Molasses-based BBQ sauce
A Pint of Orange Juice
Louisiana-style seasoning
Black Pepper
Mesquite Woodchips
(my secret ingredients)
Go Camping.
Start a fire early in the day so that you have a nice bed of coals. A VERY nice bed of coals. A big fire with a very nice bed of coals. Make a sweetbirch side oven and toss the remnants of the woodchips nto this. . .(if you don't know how to do this, you've already lost.)
MARINATE the pigleg in the marinade of all ingredients listed above and wrap in tinfoil.
Cook until done.
ENJOY!
SWEETEST CORN:
Soak a few ears of New Jersey White Sugar Corn in the Water Basin within which the Mesquite Chips are soaking. . . Keep in the husk. . . Rotate as needed, serve as necessary. . .
YEEHAW POTATOS:
Use an apple corer and impart whichever flavour you want. Soak in Magic Mesquite Mix and toss on edge of bbq. . .
Whatever you try off these posting will be horrible. . .because I am the King, and I don't share freely.
IF THE HUMOUR OF ALL THIS IS LOST ON ANYONE, I WENT FOR A WHOLE "IS/ONLINE HELP" SORT OF MOOD WITH THIS.
In all honesty, I can BBQ circles around 99.97 percent of the people reading this and will share recipes freely and frequently. . .This is the menu I prepared recently (partial, mind you) on a camping trip and was met by rave reviews. . .ANYONE INTERESTED IN A SERIOUS FORUM ON THIS SUBJECT?
