Chocolate Recipes

Chocolate Cupcakes

3 cups All Purpose Flour 750 mL

2 cups sugar 500 mL

1/2 cup cocoa 125 mL

2 tsp baking soda 10 mL

1 tsp salt 5 mL

2 cups water 500 mL

1 cup oil 250 mL

2 tsp vanilla 10 mL

2 tsp vinegar 10 mL

Combine flour, sugar, cocoa, baking soda and salt in large mixer bowl.
Add water, oil, vinegar and vanilla.
Beat with electric mixer at medium speed 1/2 minute or just until blended.
Spoon batter into greased or paper-lined muffin cups, filling 3/4 full.
Bake at 350°F (180°C) for 15 to 18 minutes or until toothpick inserted in center comes out clean.
Remove from pans; cool.
Frost and decorate as desired.

Self Saucing Chocolate Puddings

6 Portions

Preparation Time: 15 minutes

Cooking Time: 15-20 minutes

20g butter (for greasing)

4 eggs, 4 egg yolks

120g caster sugar

250g butter

250g plain chocolate ( 70% cocoa solids), broken into pieces

50g plain flour

To Serve:

50 g icing sugar

120g vanilla ice cream or thick double cream

mixed or one variety of summer berries e.g. blueberries, strawberries, raspberries (optional)

Method:

Advance Preparation (At least 6 hours in advance): Grease 6 generous sized ramekins with the butter. Place the eggs and caster sugar together in a bowl and beat them until creamy and thick. Melt the chocolate and butter together in a bowl placed on a saucepan with gently simmering water. While stirring gradually pour the chocolate mixture into the egg one until well mixed and glossy. Sift the flour into the mixture and fold it in gently. Pour the mixture into the prepared ramekins, cover them and place in the refrigerator to chill.

To Cook: Preheat an oven to 180deg.C. Place the ramekins on a baking tray and place them in the oven, allow them to cook for 15-20 minutes until the puddings are just set (they should be dry and firm to touch).

To Serve: Turn the puddings out onto serving bowls or plate. Dust them with icing sugar and place a scoop of ice-cream beside them or a generous spoonful of cream. Place the berries around the plate (optional). Serve hot.
