Hot Savoy Salad
This is really just a variant on Odo's Favourite Cabbage, but it's so damn tasty that it's worth a mention.
Ingredients - (Serves 2 as a Main Course, or 4 as a Starter)
- 1 large Savoy cabbage
- 2 large handfuls rocket
- ½ white onion, finely chopped
- 4oz - 100g - chorizo sausage, unsliced
- 1 large clove garlic, minced
- Butter to taste
What To Do
- Finely chop the onion and cut the chorizo into a small dice (about 8mm [1/3"] cubed). Remove the outer leaves from the cabbage, separate the inner leaves, wash them and tear into pieces about an inch square.
- Cook the chorizo pieces in a small amount of olive oil over a medium heat for a minute until the fat has run out and the oil become a deep orange colour from the paprika.
- Add the chopped onion and stir-fry for another minute.
- Add the cabbage leaves. Stir-fry rapidly for 2-3 minutes until the leaves have slightly wilted and any stem pieces are soft.
- Add the rocket, garlic and as much butter as your heart will allow. Stir thoroughly for another minute over the heat and serve immediately.
Variations
Those who are watching their weight may want to replace the butter by a glass of white wine. This is nice as a tapas dish and could be served with fresh or marinated black olives or sardines on toast.
