Great read, like the other two. It sounds so fascinating, but I get the impression that I'd not be fir enough to do any of these walks

Looks good to me. I think you've got everything it needs.
For interest, I've paraphrased some notes from this section of the AA book - I think you've covered most of it either here or in the excellent Beer entry.

Weston Mouth: pebble beach accessible by path, leading down a wooded valley from a lane. Often deserted, backed by high red cliffs.
Branscombe Mouth: long pebble beach backed by a large area of grass beside a stream, owned & preserved by the NT.
Beer: Famous for lace (part of Q Victoria's wedding dress was made here) and smugglers. Its cottages lie in 13 little valleys. Has the most westerly chalk cliffs in England; the white contrasts with the red cliffs nearby. Colony of cormorants live on Beer Head.

Not much to add to this one. I think you're right to stress just how strenuous this stretch is; I well remember once starting out from Sidmouth to walk to Seaton on what turned out to be an unseasonably hot day...
I don't think you clearly explain what the Undercliff is, despite mentioning the 1788 landslip. Talking of landslips, perhaps a mention of the geological instability along this section of coast path: the route up Salcombe Hill was moved back 10 metres in October 2004 (the former route ran along the cliff edge) and of course there was a huge collapse between Salcombe and Weston about a year ago which, I believe, resulted in a fairly significant diversion.

I believe your bus information is wrong. There is no X59 service; the FirstBus Jurassic Coastlink service (Exeter to Bournemouth) is X53, but as I mention in the Sidmouth entry it doesn't go to Sidmouth, instead stopping at Sidford some two miles away. There is - or at any rate, was - a service 899 operated by Axe Valley Transport some of which operated directly between Sidmouth and Beer. This is shown on the Devon County Council website (http://www.devon.gov.uk/bus_maps?url=0_clients/devoncc_bus/pages/38.htm) but Traveline doesn't seem to know about it.
Personally, I'd suggest (from Sidmouth) a 52A/B then changing to the X53 at Sidford, or even a 52B to Seaton and catching the X53 westbound back to Beer.
