Don't be fooled by Emeril Lagasse, he has a restaurant in New Orleans, but he isn't from here. His recipes are really good, though. And, his show is pretty entertaining.

I can't remember the name of the cajun cook several years ago on PBS but he was older, always wore suspenders.... said "Aye guawarntee it" all the time(best phonetic spelling I could do of the way he said it)

I used to watch Justin Wilson's show for the jokes.

He believed in cooking with wine. So, after he filled everyone's glass, he would start cooking.

Sounds like how cooking should always be done!

Is that why all he ever made was the same seafood gumbo recipe over and over and over?

I remember some blackened fish of some kind... but then I only saw the show a couple of times.

He only blackened it so he could toss it in that week's seafood gumbo.

A trout stuffed with a rice dressing was the feature of one show. I've forgotten most of the jokes . The food and the jokes were not the most important thing about that show... It was part of a movement to regain a bit of the Cajun culture.
