Injected marinades keep the meat from being dry. Or, you can just deep fry the turkey, instead.

People tend to panic over all the You'll-get-food-poisoning-if-you-don't-cook-your-turkey-properly 'Advice' that comes from the various Nanny State departments
20 minutes per pound plus 20 minutes and make sure the juices are clear, that's the advice we weere give at college and it's never let me down yet

I don't know about finicky.. I like most things.. turkey just doesn't happen to make that list.. I think it's a childhood thing..
