Some interesting questions there, and some which I can provide an answer to.
What exactly are 'fiddlesticks'? - they are violin bows
Can animals suffer from phobias? - yes. I had a cat that was terrified of the doorbell, people dressed in black, my brother-in-law and the Starship Enterprise. All of these were completely unreasonable and induced in him a state of complete panic.
Why do ''push'' taps never stay on long enough to rinse the soap from your hands? - to save water
If warm air rises, why is the ice compartment (which one assumes is the coldest bit) at the top of the freezer? - to try and even out the temperature in the fridge. If the ice compartment was at the bottom, the bottom of the fridge would be cold and the top at room temperature. In fridges without an ice compartment, the coldest spot is at the bottom, so you should keep your lettuce there.

If I remember correctly, Gnomon's cat's phobia was even more specific, Whisky. He was not afraid of the ship itself as long as it remained on impulse engines; he was just terrified when the Enterprise engaged warp drive.
Given the worrying implications that faster-than-light travel and relativity have for causality, I don't blame him.

Most cats have a fear of being put in a box with a vial of poison. That's not a phobia though, it's entirely rational.
