chopped cooked chicken
mayonnaise
bit of mild curry
whatever fruit and veg are lurking in the fridge

I'm not looking for the 'real' recipe (there are better things to do with apricots!) just some good ideas, as I'm serving 10 tomorrow lunchtime smiley - yikes

The way my Mum has always made it is to soften an onion and then add some red wine, curry powder, s & p and then when that's cooked up and mixed nicely, stir in a jar of own brand mayo (you can use hellmans but it's bit of a waste and actually the own brand stuff gives a better result).

Stir in the chopped up chicken bits and a few chopped, crunchy apples and some sultanas and Robert is your mothers brother ... absolutely lishy-loo!

Quantities I have no idea but I would have thought a couple of onions, a couple or more glasses of wine, a couple of spoons of curry powder, s & p to taste ... chook as required

I saw a recipe for Jubilee Chicken created for the Golden Jubilee last year. Unfortunately I didn't make a note of the recipe, but I think it used green Thai curry paste and lime juice.

Jubilee chicken is quite different - but very nice! It doesn't smack of just-out-of-rationing in the was that coronation chicken does... It's sort of tangy...smiley - drool

Don't get me wrong C, Hellmans is the usual Mayo of choice but when it comes to making the coronation chook, the slightly gloopier and less gelatinous consistency of the own-brand seems to work better ... it's purely a personal preference mind!

How spooky Cloviscat! I really fancied some Coronation Chicken for lunch today and asked b/f to pick up some cooked chicken while he was out.

My recipe is pretty much the same as yours

Cooked chicken breast
Mayo (Hellmans of course)
Madras curry powder
Sultanas
Apricots

Mix, refrigerate for at least 1 hour (the sultanas get all squishy then), eat, enjoy!

Only problem is b/f is not home yet and I am HUNGRY!!! He went out hours agosmiley - cross

Lady - you're quite right that you need to make it well in advance - I'm going to make mine tonight for tomorrow lunchtime (*if* the baby ever falls asleep will determine if I go shopping *after her sleep!*)

Aaaargh!!! smiley - cross He (b/f) finally got back at 4.30!

I have now made my Corrie Chook and I too will be having it for lunch tomorrow (with maybe a sneaky taste around brekki time!) and I am sure it will be "absolutely lishy-loo!" ¹

Phew - lunch is over, everybody's gone home, the baby's asleep smiley - zzz

Coronation chicken went down well, though two people had never had it before and one said she didn't like the ingredients (then proceeded to have a second helping!) There's enough left over for tomorrow lunch too!

In the end I used:

Hellmans
Curry powder
Chopped chicken breast
Crisp green apple
Celery
Red pepper
Boiled baby potatoes
Sultanas

All served with pitta breads, shredded lettuce and cherry tomatoes
