Dammit I take a day off and miss all the action (and the cakes).
Thanks to everyone who commented in PR - it's impossible to write something like this without local knowledge. I started the original conversation (see post 1) with this entry in mind, so I'm delighted that it seems to have worked. I'll certainly try the technique again.

Well, apart from removing all those bold tags which I spent hours painstakingly adding, it looks OK.
I prefer the bold - it makes it easier to delineate the names from the pronunciations, but if this is what the editors prefer, then I suppose I'll have to learn to live with it.
