I have just herd a phrase,

"if you can grow a bramble you can grow a gooseberry"

Are there anymore plants that are that easy to grow?

I can only tell you my tomatoes grow like... whatever grows extremely fast. I planted the seeds in early April and the plants are now almost 30 cm high (you can also buy plants of that size at this time of the year if you want). I grow them in large pots on the balcony because I don't have a garden. Basically they just need enough water.

My surviving tomatoes are well advanced in their second growth, flowering and beginning to fruit.

After the first pick I prune the older and no longer productive stems back, leaving only the fresh green offshoots around the base to produce a second growth.

I never did that. Mine tend to continually grow fruit, red ones and green ones hang next to each other and I just pick the red ones and leave the green ones to ripen. In winter the plants die anyway.

Tomatoes seem like a good value plant how long will they continue to produce fruit

Mine have fruit until it gets cold in late autumn, then they die. I plant new seeds each year. There are various kinds of tomatoes, it's worth searching for special stuff.

I read that you can also get new seeds from your own fruit by drying them, but I haven't tried that yet.

The best production tomato I've tried for local conditions is the "Heatmaster", very popular in the nurseries, producing about a gallon/3.75 liters of tomatoes in 6 - 8 weeks from a nursery start 4 - 6 inches/13 - 20 cm, on a mature plant about 12 - 14 inches/30 - 38 cm in height, making it ideal also for window boxes and patio growth.

Locally, none of the tomatoes do well in the torrid season, but most produce well in the spring, corresponding to summer conditions in most of the northern hemisphere.

Most of the tomatoes I grow are exotic types I cannot easily supply from the supermarkets.

If I ever have a garden I'd want to grow more of the old crops of tomatoes in different colors. Some of them taste really great and quite different from the ones you can buy in the supermarket.

The two best on flavor I've tried in my garden are the German greenstripe and the Siberian black, both with a flavor like barbeque sauce directly from the plant.

Neither is very prolific in my environment, but, surprisingly, the Siberian black is the only tomato I've so far tried that can survive the local 120F/49C summer temperature extremes.
