well according to the good people of the Califonia Pistachio Commicsion As the pistachio kernel grows, it naturally expands within the shell until it splits open. which tends to suggest it's just the natural ripening process of the nut

no i think that, the hull has to g=come of first either natrually or done by the picker. then as the kernel ripens it expands and cracks the shell

They're all split, but I don't know if they're raw or roasted.

Maybe you should go ask him, he's the expert.

It does sound as if they split open before they're picked and I didn't know the unsplit ones (just about impossible to open) weren't worth the effort as they aren't ripe.

I'd also forgotten that often pistachios are dyed red and I didn't know the white ones are bleached. The ones I buy here are from Iran and are kind of straw-coloured, so perhaps (I hope!) they aren't bleached.

Hmmm, have never tried pistachio icecream but there is a (Greek?) flaky pastry filled with pistachios and honey that is quite yummy.
