How do lettuces and cauliflowers seed themselves?

I mean, where are the seeds in these things? Being of the leguminious persuasion, I imagine that the probably don't even have seeds, but since they don't seem to have any tubors (tubers?) or similar, I'm at a loss how they manage to multiply at all. And where do all those lettuce and cauliflower seeds that you can buy in packets at the garden centre come from?
If you leave a lettuce or cauliflower long enough, does it grow a flower? Maybe this could be the answer, but I'd be grateful if anyone could enlighten me...
