Make sure it's yeast-free before drinking it. I made that mistake once and spent a lot of the next day attached to the porcelain respository.

Actually, that's why I ran a second fermentation.
What I have is a basic kit, but with yeast cultured to create stout. It leaves an awful lot of sediment, but when you siphon into a second glass carboy for a week, lots more of the yeast settles out. That leaves less carbonation when you bottle, but when you're doing an or a you don't want so much carbonation anyhow.
It's been about a week, so I think I'll be ok.
