A Conversation for Great Cold Drinks

Here are better recipes for Iced Tea

I don't know where the writer learned his/her Iced Tea formula, but as given in the article it would likely be bitter (put six tea bags into HOW MUCH? boiling water - WHAT SIZE of pan? - and then brew - while boiling? simmering? off the heat?) and strong enough to stand a spoon in - especially with two cups of sugar in a 'large' pickle jar - what size, about 500ml? Tooth rotting as well.

Iced tea should be refreshing and light. It's how it's drunk by the gallon in the southern USA. Wherever you are, if you're after a cool glass of something to quench your thirst, here's how, in two ways.

First, with hot water. If you're using the atrocious British excuse for tea as is ubiquitous these days in the dust and sweepings filled tea bags, then put four into a litre of freshly boiled water. Turn off the heat, and remove bags after about three minutes. That's plenty strong enough - if using typical UK teabags. If you're using better quality teabags increase number of bags and time to personal taste. Then decant into a large jug or jar to hold the litre, and let cool. Serve in tall glasses over ice, sweeten to taste - stirring vigorously, of course! - and add fresh lemon slices/lemon juice.

Second, try sun tea, using cold water. Fill a large jar - two litre size or larger if you have it - with cold water, and add 8-10 teabags. Then put the lid on, and leave in the direct sun for several hours. The warmer and sunnier the day the better - admittedly rare if you live in the UK! Result - slow brewed tea, without any bitterness. Then serve as before, over ice, sweetened and with lemon.

Additionally, you don't need to sweeten with sugar. Try honey - you'll get different tastes depending on the honey used. I'd only sweeten the whole jug or jar if you know everyone has the same sweet tooth as you - best to leave it for each drinker.

Finally, for the best iced tea, of course, use loose tea leaves. You can then brew a drink using one type or a home-made blend - try different mixes for different tastes. Add the leaves and strain or use an infuser. And if you're using hot water, don't leave the leaves too long - again, you'll get bitter tea.

And please ignore the ignoramus who wrote the stupid article. He/she has absolutely no idea.
