Hi friends,

I have been lazy, cold, goodness knows what, but I did not come to my computer for a few days.

It is going to take me yoincks to catch up, but I know I am going to enjo7y every minute of it.

I wish I could remember how to make sauerkraut which was one of the requests. The only thing is it is so smelly that it is really better wo buy it in a glass jar for a tin. !!

It ia good to be back - alive !!

Very dear Paul H.

so sorry about the car. so much damage can be done in so little time. I hope that they repair it well.

It is amazing how much damage can be caused so quickly. I have been fortunate, but I had my eyes next to me always - K. is a marvellous observer, and was a marvellous driver before he fell ill, and I must admit that it was when he told me that I should no longer be driving - at the beginning of last year= that I finally stopped.

I had got my licence in South Africa when I was sixteen, and I stopped driving when I was 79!! Fortunately without any problem, but I really have Keith to thank for that.

Go well, and next time you would like to observe something, stop the car and get out of it. !!!

Unless of course it is someone holding you up. !! Then put your foot on the gas and "Go man, Go!"

With affection

Christiane

Reality Manipulator

Hello Christiane,

I have only tried to make sauerkraut once and it ended up as a disaster as the cabbage and juniper berries ended up covered in maggots. This happened even though the dish was covered and it was checked every day, and it did not take long before the maggots appeared, I think it was on the third day.

It's real treat reading your very informative and very interersting journals as they make a very good read.

It's good to hear that you are keeping well.

Maggots are good for cleaning up gangrenous wounds, but they do nothing for sauerkraut. smiley - yuk Buy sauerkraut in a store, don't try to make it yourself.

There's a couple of German-American guys around here that run a sausage stand called Frank's Franks. They make really good sauerkraut - beats any that came from a jar.

Not that I've ever been brave enough to try making sauerkraut at home. I've had mixed success at getting micro-organisms to bend to my will. Yeast is quite cooperative; bread, beer, and mead all turn out well. Yogurt was okay but runny. Sourdough turned a nasty shade of pink.

Hi, Happy Nerd. Many years ago I bought a book about baking bread, and I happily set about trying all the recipes. I let the dough rise on the radiator all Saturday morning, and was fairly happy with the loaves after I baked them. I went through a sourdough phase for a few weeks. I don't remember what color the sourdough starter was, but I doubt it was pink. smiley - erm

Christiane, if you manage to completely catch up with the backlog, please tell me how. I've never quite managed it. It's always great to hear from you.

Sauerkraut is something I've never attempted to make at home. My mother used to make it. Disgusting stuff it was, too. smiley - ill I much prefer the Bavarian style with the caraway seeds that comes in a can from the grocery store.

I rarely eat sauerkraut because of its high salt content. A little once in a while doesn't hurt, though.
