Newbie here. This may seem a foolish question, but I see people with little sayings or whatever next to their username. Is that actually their username or is it something you can add? I'm slightly confused

The name is usually just the first bit (mine's Roymondo) and the rest is frequently silliness. You can add to your name, or change it completely, by clicking 'My Preferences' over there on the left. It's not a good idea to completely change your name as it only confuses people!
