As Promised, a description of Whoopie Pies:
Whoopie Pies are not pies at all, actually.
They're two big soft (cake-like) cookies with gobs of fluffy buttercream type frosting between them. There's usually enough frosting in them that when you take a bite, the frosting squishes out all over your face.
Usually the cookies are a rich, dark chocolate. I also have recipes for them in pumpkin, banana and vanilla.
Normally, the frosting is always vanilla for whoopie pies, but I've also seen chocolate or cherry flavored frosting used in the vanilla ones, and cream cheese in the pumpkin ones. Sometimes people will put peanut butter frosting or mint frosting in the chocolate ones.
Oh, and not only is the frosting fat-laden, the cookies themselves are generally high in fat, which gives them that wonderful soft texture.
