I wonder whether they would get so tall if they were less crowded. We have white pines that get very tall in thick forest, but if one grows in a field, the branches go sideways and they don't bother with height

Yes, I think they do get more branches when they don't stand so crowded, but most still get very tall. They grow smaller higher up in the mountains or on rocky ground.
