I believe they mostly used to ride cows.

As a card-carrying Taurus, I am proud to see a member of my team featured. When I toured central Europe in 2004, I was pleased to see artistic sculptures of cows in almost every city I visited. It put me in a good moo'd.
This also reminds me of a silly story I'm writing, in which common foods are relabeled based on pseudo=-scientific criteria. For instance, you would reach into the reftigerator for a carton of BLF (Bovine Lactational Fluid, i.e. milk). Eggs would be PC's or pre-chickens.
