I find that the way I eat Chinese food varies with the utensils I use, and this affects the flavour. Most of the time I use chopsticks, purely because I can. On such occasions, the rice must be well mixed with whatever sauce the food comes in, so that a enough rice sticks together to be able to transfer it to my mouth. This mixing is unnecessary on the (rare) occasions when I use a fork, so I taste more of the rice. This can be a good thing, as Chinese rice can be *very* nice - they sometimes cook it in stock, which gives a beautiful flavour.
I don't think that Chinese food is 'cooked to be eaten with chopsticks, so these are the correct utensil'. Flavours in food are not chosen according to the way the food is to be eaten. I find that very little of either utensil (chopsticks or forks) is in my mouth for long enough to affect what I taste. I also find that the flavour of the meat part of the meal is unaffected by the choice of utensil. It's really only the taste of the rice that changes.
So you could say I'm neither pro-chopstick nor pro-fork. My choice of utensil depends on how I'm feeling at the time. As I said, I usually use chopsticks, but sometimes I don't want to "fight" with my food, so I choose a fork.
