It certainly looks do-able in the way you've set out. I was a volunteer for some time and enjoyed it very much. It was one of the things that kept me hanging around for years.
I think if we have an option of taking this route it could be worth going for.
I wouldn't be much of an editor type but I'd volunteer for something or other to keep the thing going.

It's also really good to know that people would be willing to be volunteers.. I do like volunteering for h2g2 as well, it certainly keeps me around and about.
