Hi again, lanzababy!
You're right about the shell being a perfectly natural container for cooking the lobster in boiling water, but that's not the only way they get cooked.
I looked into that technique, and realise that it's normally used when the lobster will be cooked on a grill. The half-shells, make a perfect container when placed on a hot grill, split side up, leaving great access for garlic butter!

I looked about for some scientifically valid information on the humane dispatching of lobsters. I happened accross this video of an episode of "Good Eats" with Alton Brown.

He suggests a 'lively' lobster and walks us through the kitchen process. He discusses how closely related they are to the cockroach, and how its brain (to be generous) is like that of a grasshopper.
He repeats claims of 'experts' who say that 15 minutes in the refrigerator and they won't feel a thing.
Maybe not for the especially squeamish!

Fords Towel! You are a saviour! I went to various fishmongers today and yesterday and didn't see any lobsters anywhere.
That video is exactly what I needed to confirm the 15-20 minutes time in the freezer. I've changed the footnote back now to this time.
A Geneva convention on the humane treatment of lobsters? Once this is published I think I'll add that clip onto a conversation at the bottom.
