Not enough entries involving Ireland and alcohol. All I really need to know if maybe it isn't long enough, if it is too long it could get boring, if to short a bit of a let down.

Only in your fourth sentence, where you mention the Royal Irish Constabulary, does it become clear that poitín is an Irish drink. This entry needs some polishing, but should make its way into the Edited Guide soon enough!
(That's if you're prepared to work at it. I feel like such a hippocrite! I haven't done anything to my entry in a month.)

It's poitín, not potín. The word is pronounce 'putcheen'.
It's "man in the pub", not "man in a pub".

Should one happen to receive a small bottle - perhaps left behind by a relative after a visit, or accidently placed in your coat pocket whilst it was hanging up in the bar - then a small quantity should be placed on a saucer and lit.
If it burns with a blue flame - then drink some cautiously - any other colour - throw it away.

Well, you don't need to use apostrophes to pluralize words, and that would be easy enough to fix. Just change day's to days, centre's to centres, etc.

I think the main thing that still needs some work here is the style. Right now, it reads a bit like an email to your friends -- you've used ALL CAPS in places, loads of exclamation points, quite a number of incomplete sentences, etc.
Now, that's not to say we'd like to see this read like some smarmy school report, but I do think something a bit closer to what you might read in an enjoyable magazine would hit the mark. Here's a list of the different entries we have in the Edited Guide about drinks, maybe they will give you more of a clear idea of what we're looking for -- <./>C259</.>. If this was to be picked now, a sub would have do to quite a decent bit of work making those changes -- and then it would be written more in the sub's style than yours, which just wouldn't be fair to either of you.

Just one thing: I feel you need to at least mention the usual spelling of the word in English, pocheen.

I've never seen it spelt pocheen. The normal spelling in English is poteen.

Yeah, I've only seen it spelt Poteen as well.
*shrugs*
