I suggest you convert the measurements from dl (decilitres) into grams, as most recipes in British English (the language of the guide) are given by weight, not volume.

Perhaps mentioning that the spelling of 'hummus' differs widely. I don't know why this is so, but I've purchased 'hummus', 'houmous', and 'humous' at one point or another.
Mmmmm... houmous/humous/hummus & pitta bread.... mmmmm.

That would not make an accurate mesurement as the weight differs according to how much humidity there is in the dry peas and the tahini is (sort of) liquid. How about I write (almost a pint) for those who don't know what 5 deci-liter is?

Hello,
Interesting entry. But I have to quibble with the use of the first person. The guide tends to look down on first person entries mostly, so I'm afraid you'll probably have to rework that first paragraph. I'm also curious of more about the history of hummous. What regional cuisines does it figure in? Is it just Lebanese or is it used all around the Mediterranean?

I think changing "when the peas are cooked" to "After the peas are cooked:" may improve readability.

I don't know. I have not found it in Greece or Italian cuisine. It's probably found in Egypt and that way, but that's under the Middle East- umbrella I think. Maybe South Spain and Marrocco. In other words countries with arabic traditions.
I think that's the key-word here: Arabic tradition.

Hummus is of course (every d**m thing in the world is of course) on the web. I suspect giving URL here would not be approved, but here is some info I found (If you want URL, then tell me how (Im kinda new to h2g2)).
400 BC -
Plato and Socrates write about the benefits of Hummus in their diets.
1200 AD -
Mediterranean countries list Hummus as a staple.
1910 -
Waves of immigrants bring Hummus to America.
1981 -
Some regional brands of Hummus appear in supermarkets.
After that it goes all comercial, but its a start, history wise....
Benefits of eating hummus:
No cholesterol
No saturated fat
High in both protein and fiber
No sugar
High nutritional value
Hummus meets recommended non dairy protein guidelines

Ah yes, very good ) You can of course also buy hummus in some shops in most parts of Europe (that I have seen anyway), especially in health stores.
Apart from that, great entry - very glad it was there, as otherwise I would have had to step in ))
