Maybe once or twice a year...
A HUGE tray (as in baking tray, not the ploystyrene sort you get a chip shops)...
Covered completely with oven chips.
When they are about 3/4 cooked, they are taken out of the oven, and covered liberally with grated cheese of various types - cheddar, edam, and mozzarella. This is then gently sprinkled with a bit of flavouring - onion granules, and cayenne pepper.
Back in the oven until all the cheese has melted, and is beginning to go hard enough for the chips to be brought out in chunks...
About a week's worth of calories in one meal (and before anyone comments, that lot *IS* shared - but it *is* a once or twice a year treat.

Nah, they're missing the point - cheesy chips are, as you rightfully pointed out, a student habit, which you can carry on with after leaving college/uni, but should NEVER be spoiled with *sauce*...
Chips. More chips. Cheese. More cheese. And a bit more cheese.
I think I sense the first batch of the year coming on...

Are the beans mixed in, or as a side?
And is it all put in the oven to melt properly, or just sprinkled?
(you may be able to tell, I'm passionate about this being done right!)

Huge bowl of chips, beans poured on the middle and cheese sprinkled liberally on top then I suspect microwaved a little to help it melt a bit more, either that or it;s all assembled while it's hot hot hot!

I prefer their chilli nachos with soured cream and melted cheese. They melt the cheese on the nachos first, then you get a good medium spicy meaty chilli and then a really good dollop of soured cream around the edge.

Well, if you're grilling it, then I'd imagine you'd enjoy it, if you like mustard...
Mayo is ok for dipping chips (prefer it with fresh garlic squeezed into it) but not all over. Yuk!

The only true topping for chips is saté sauce - that's right, peanut sauce! A6643514
The cheesy chips remind me more of my grandmother's special dish that I still can't get enough of - cut enough potatoes in half lengthways to fill a baking tray, and set them on it cut side up. Bake for a bit, say 20 minutes, then take them out and pour an entire container of cream over them, add salt and pepper and nutmeg, and then liberal amounts of cheese. Bake until the cheese is golden and the cream between the potatoes has reduced to a thick sludge everyone will fight over.

Ooh, my mum does a similar thing with par-boiled potatoes (usualy quartered or around an inch across...) spread in a baking sish and covered with a mix of cottage cheese, double cream and lots of fresh garlic, and then topped with grated cheese and baked until the top's golden brown...
I think we need a baked potato-dish evening
