Vegan buffet question

Hi everyone.In a few short weeks I am helping to cater for a local charity's party, which will offer a vegan (cold) buffet. I would be very grateful to anyone that could offer ideas for the buffet table.For example, if you had a choice, what sandwich would you like to see at a vegan buffet? Or which pastries, snacks and nibbles?
