In my experience organic bananas are less damaged by being in the fridge and will ripen after being taken out. Does anyone know if there is a scientific basis for this or should I be checking the temperature in the fridge ?
My only suggestion on the entry, which I enjoyed reading, is that you might consider making the recipes a separate entry. I suspect you may get more suggested. I quite like them fried or put under the grill for 15 mins or so with a blob of butter and some lemon juice, and eaten with pouring cream.

This is a really good entry. I was looking for an entry on bananas to cite in my entry on Banana Toast , and now I have found yours. I will be sure to link to your banana entry from A391673 now. I also have an external link to some kind of banana-related site on that page.
Would it be possible to add nutritional information for the yellow berry, too, as well as explaining the difference between bananas and plantains? Check out these edited-guide entries:

Hmmm... I've never heard that, but I won't say it's not true! I just know that the official sources say that bananas - really any kind of fruit - will stop ripening when you put them in the fridge. It has to do with the gas that's released from the skin of the fruit. A chemical change happens when it's chilled, and the gas is no longer released.

I'd also heard that the ethanol, the gas it gives off, affects fruit ripening around it, which is the reason (or a reason) for the banana hook. The hook keeps it away from other fruit, and means that, as you say, the gas doesn't sit on the bottom of the banana and ripen that bit more.
I used to work in a specialist cookshop and that's what we used to tell people, anyway!

Ahhh... Yes, I've heard that too - you can put a piece of ripe fruit in a bag with unripe fruit, and make the other fruit ripen faster.
