However, I take it that the ingredients are variable? You can add/remove things as you can see fit? Turn it into a what-I-have-left-in-my-fride stew? Though it's not as exciting of course.

Definitely. Use what you have on hand. Cooking should be creative. 
Cooking methods and knowing how to properly season things are much more important than worrying about individual ingredients and measuring things exactly. Especially for soups and stews. Use the things you like.
