Some old breed of chicken that no longer exists?
Some other biological definition of horns that is not commonly known?

It also isn't a biological definition of "horns".
But for a clue: it is a certain *type* of chicken we're talking about.

They're quite healthy chickens.

No, though I'm sure you could find them in France.
It might help to think about the specific type of chicken. Or why the farmer is not surprised.

the greater horned rooster
the glands that secrete the outer shell of the egg come out of the head in a wierd mutation and when they try to lay an egg you get a watery squirt out the back end and a couple of horns out the top

It's not a mutant. It's quite normal for that type of chicken in that time and place.
I'll give a point to anyone who does a good summary of what we've got so far...
Nobody will guess it in one go unless they know already (where's Gnomon when you need him?) so try taking it step by step...

Yes, that's close to the right spelling of Archaeopteryx, which, however, has nothing to do with this question. Next person who says it's something other than Gallus gallus domesticus, your plain old garden-variety chicken, will be fined a point for not paying attention.
Nor is it merely a matter of semantics - the chicken has horns, though they're only partly made of horn.
