You could try to use GuideML for formatting the text which in particular would improve the appearance of the bullet list towards the bottom.
This sentence: "Enzyme use in biological washing powders is described." somewhat doesn't fit into the flow. It could be re-used as a GuideML subheader like 'Enzyme use in biological washing powders'.
The Edited Guide uses British spelling, so please change your -ize verbs (synthesized, commercialized)
There's something wrong in the sentence beginning with 'Therapeutic enzymes: Enzymes are sometimes used...'. Looks like you edited three sentences into one.
"[beer brewing]... maize, sorghum, [...] or rice" -- Such beverages can only be called 'beer' if you take the term verrrry loosely. In Germany they would be called 'fusel' (Sorry, couldn't resist )
There's one more application for enzymes: cleaning contact lenses, see A523441 .

Oh, I didn't see this entry until just now.
I agree with Bossel. It would be nice to do this in GuideML, so that you could have clear headers, which would make the text more approachable.

Hi there!
I think it would be a good idea to try and look at this entry from the perspective of someone who isn't all to sure what an enzyme is. For example, the way the introduction is currently written, someone could mistakenly come away with the perception that enzymes only occur in bacteria and molds! I think it would be worthwhile to start out with something that briefly explains:
* what an enzyme is -- you have a sentence in the introduction that does this, but it uses the word 'catalyst' -- and someone who doesn't know what an enzyme is is probably just as unlikely to know what a catalyst is. I would probably also explain that enzymes are proteins, by definition.
* what an enzyme does, both in nature and in industry. your explanation of 'natural' vs 'industrial' enzymes isn't quite clear enough, I think -- after all, the quantity involved isn't the only difference. and not *all* industrial enzymes have been derived from bacteria and molds.
The ways in which enzymes are used medically goes so far beyond what is described here that I wonder if perhaps it might be a better idea to focus this entry just on the industrial uses?
