Just rejoined h2g2 and found your post. Very good advice, and your description of a good music shop sounds like my own store. Won't use this space for advertising though, but you can always ask.
I'd only add that buyers should go for the best they can afford, the more playable the guitar, the faster the progress - all else being equal. I've seen many beginners almost give up because their instrument wasn't very good but suddenly leap ahead once they upgraded. I also do a lot of repairs and set-ups that often make enough difference to help the player make real progress.
Finally, get a good teacher. Personal recommendation is the best way, but music shops often have a list of people they know who teach.
