Leek and Potatoe Soup

This is simple (but good) soup made even simpler in a Crockpot
1 pound potatoes, peeled and slice or diced
1 pound leeks (white and green parts) sliced thinly
7 1/2 cups Chicken stock (canned will do)
1 teaspoon salt
Freshly ground black pepper to taste
1 cup heavy cream (optional)
Chopped parsley for garnish
Slice or dice the potatoes, slice the leeks thinly, being careful to wash
off any dirt or sand. Place the potatoes and leeks with the Chicken stock,
salt, and pepper in a crockpot and cook on high for about 6 hours. Let cool.
Mash the vegtables or puree them in a food processor (A hand held blender
works great.) Check the seasoning and reheat. Add the cream. (The cream can
be held and added only if wanted.)

Nice recipe, but leeks aren't really a winter vegetable though.

Yes they are...or at least they originally were. As with most fruit and veg, leeks have become an all round thing, but they are most tasty (unforced) and comforting in the winter. Where would winter soups and stews be without the humble leek one asks..
As for the recipe.... good one. Mine only differst with the addition of a bit of fried onion and ground allspice. *starts craving leek and tattie soup*

Allspice or nutmeg with tattie or cabbage make an amazing difference. Makes them even more warming and yummy.. (or maybe I'm just ?)
