Sweet and Sour Red Cabbage

Red Cabbage is a vegetable that reminds me instantly of Christmas. this is a dish that I learnt to cook whilst boarding with a family from Holland, so I expect it is the Dutch way of cooking red cabbage. It goes beautifully with turkley goose, ham, all the christmassy meats and can be prepared a few days in advance as it improves.
Ingredients.
1 goodsized firm red cabbage - shredded finely. Take the white part out and discard.
2 Bramley apples, quartered and take the seeds out.
About 1/4 lb of streaky bacon diced.
two medium sized onions diced.
About 6 juniper berries
about 3/4 cup red wine vinegar
about 1/2 cup brown sugar
Salt and Pepper to taste.
Method
Fry the bacon is a good sized pot. |If it is a bit dry add a couple of tablespoons of olive oil.(Less if you do not like oil)
Fry the onions and the apples in the bacon and onion mixture. When they have softened add the shredded red cabbage and the juniper berries. Stir gently and cook gently for about twenty minutes with the lid of the pot on so that no steam evaporates. Stir occasionaly., when the cabbage has softened add the vinegar and the brown sugar together with the salt and pepper. Be careful with the vinegar - it depends on the size of the cabbage - and cook for as long as you like probably another twenty minutes. I do this part with the lid off as I like to stir it occasionally and want to stop the mixture from catching on the bottom of the pot.

Dear Adele,
Yes, most certainly it would work. Just use a little more olive oil in which to fry the onions, apples and red cabbage. Hope you enjoy it.

thanks alot- red cabbage is my favourite veggie but it gets boring will let u know what i think. ta adele
