Moretum (AKA Garlic Cheese)

Well, as garlic is a year-round veggie (Well, it is on my allotment!)
here's my recipe for the Roman dish called Moretum.

4 heads garlic (not cloves, 4 whole bulbs!)
3/4 pound good strong hard cheese (Parmesan is best but pricey)
2 tablespoons Olive Oil
2 tablespoons wine vinegar
1 bunch coriander
1 bunch tarragon

Peel garlic, grate cheese and wash and chop herbs. Place into food-mixer. Whizz until chopped. Add oil and vinegar. Whizz until it becomes a nice lump. Spread on toast or bread. Or anything else, really.

Warning - If you don't really *really* like garlic, don't try this.

As I am half Polish, I have learned to appreciate garlic, so I will definatly be trying this one. Sounds delicious.

Minor point of trivia...

The original recipe is in a poem attributed to Virgil and it's from this poem describing the making of a ploughmans lunch that the USA takes it's motto.(E Pluribus Unum or From The Many, One)

this sounds like it would make a nice something to serve with crackers as an hors d'ouevre. If everyone's eating it, then they won't mind the garlic breath.

Do you think this would be nicely made with roasted garlic?
