Pork and cabbage casserole

One of the dishes my Mum has been known to make every now and again.
Gently fry a couple of sliced onions, until they start to caramelise. Add in 500g of pork, cut into strips (belly draft is great, as it has a fairly high fat conent) and gently brown.
In a casserole dish, layer up the pork and onion mix with chopped cabbage. We normally use (white) spring cabbage, but you could use any - or even a mixture!
Add a few tablespoons of water, and a tablespoon of white wine vinegar, and cover with a lid. Bake slowly in the oven until the cabbage has softened...
