Bubble and Squeak

The following is a recipe for Bubble and Squeak - there are many variants of this but the following is as traditional as traditonal comes. You can be as fancy as you want but there's nothing better than this great brekkie dish that makes the most of left-overs.
Ingredients
Left-over cabbage or brussel sprouts (You can use other greens but avoid peas/beans as these are a little too ostentatious)
Left-over boiled/mashed potatoes (they don't have to be perfectly mashed)
Method
Mix all the above together.
In a large pan, melt a good tablespoon of lard. Lard works best as it makes the potato crispy.
Fry the mixture till the bottom is a deep crispy brown.
Turn the mixture and brown again
Serve with crispy bacon and brown sauce.

Left-over roast spuds/parsnips/swede works a treat too!
Don't know why, but bubble & squeak (or squabble & beak as it used to be called in our house) is never the same made with freshly cooked veg. Must be something to do with letting it cool down...
