A Conversation for Perfect Packed Lunches

My mom and I spend weekends cooking, usually. As long as we happen to live in the same city we find a reason to get together and make food at least once a week.

Making fresh sausages (bratwurst, smoked Polska Kielbasa, whatever we decide to spice up and run through the grinder), baking breads (including pita bread for lunches) and smoking meats and the aforementioned sausages on the smoker (if you're going to the trouble to fire up the smoker you should throw in everything that doesn't run fast enough).

Lunch is almost always some form of last night's meal put into containers for me to take and enjoy at w**k. This includes the pita breads we made over the weekend for just this occasion, sausages that have been made into a meal the night before (often gumbo or something of the sort) or maybe some of the meat we smoked with some nice greens of one sort or another. I also make homemade tzatziki, which I use like others might use mayo. My tzatziki is thicker than most people would expect so it is about the same consistency as mayo or thicker.

Round this out with some nice fruit for dessert and a frozen bottle of water to keep it all cold until afternoon and it's ready to go and sit in my desk cabinet until just before lunch time when it's stuffed in the microwave if needed.
