Good old Fashioned Shortbread

8oz (277g)Butter
4oz (138g)Sugar
12oz (340g) Plain Flour
Cream the Sugar & Butter together, mix in the flour.
Rest for about half an hour, then roll out to 1/2"-3/4" (13-20mm)thick. Put into a shallow tray. Prick surface all over with a fork to prevent bubbling
Bake at 180C, 350F, Gas mark 4 for about 30 mins.
If you boil an unopened tin of condensed milk for about 2, 2 1/2 hours, you make a caramel which can be poured over the cooked shortbread. Top with a layer of melted chocolate for millionaires shortbread.

There is a shorter way to caramel which is, brown/demerara sugar, treacle/golden syrup and sweetened condenced milk, put it all in a pan, bring to the boil and then simmer gently until golden brown and a little thick, pour onto shortbread and leave to cool before adding chocolate. BUT MAKE SURE YOU CONSTANTLY STIR THE MIXTURE WHILST HEATING because it easily burns.
