This week we feature a quick chicken dish which won't take too much time to prepare and cook between watching repeats of the football matches.

Quick and Spicy Chicken
Serves Four
Ingredients
- 4 skinless, boned chicken breasts
- 2 tblspns dark brown or demerara sugar
- 4 tblspns tomato ketchup
- 2 tblspns tarragon vinegar1
- 1 tblspn Worcester or brown sauce
- 1 tblspn vegetable oil
- Black pepper
Method
- Mix together all the ingredients except the chicken. Use a fairly shallow, non-metallic dish.
- Slash the chicken breasts with fairly deep incisions, taking care not to cut right through.
- Add to the marinade and turn until completely covered. Cover and place in the 'fridge for at least 10 minutes2.
- Preheat the grill to high. Place the chicken onto a baking tray or line the grillpan with foil and place them directly on the pan. Put any excess marinade to one side.
- Grill the chicken for 7-8 minutes then turn, baste with marinade again and grill for a further 7-8 minutes, or until the chicken is cooked through.
- Test using sharp knife - the juices should run clear.
- Any remaining marinade may be heated gently in a pan.
- Serve with a crisp, green salad or hot vegetables, pouring a little of the marinade over each piece.
