I like browsing around the kitchen with the grater; grated carrot, grated courgette (grated fingers if you're not careful...)
Also, those ready-to-use canned pulses are good. Drain a can of chic-peas, lightly fry fry them in some olive oil and garlic, season, and then mix with grated carrot and crunchy green stuff.
Squeaky bean salad: chop some (French/stringy/ the skinny long ones?) beans into inch diagonal lengths, put into boiling water until al dente like pasta. Mix in a bowl with some tomato quarters and olive oil. Season with freshly ground black pepper and salt. Called squeaky bean because that's the noise they make when you crunch them!
