Couscous salad

This is one of my favourites.

Pour some couscous into a bowl. Add a pinch of salt and some oil, then pour over enough boiling water to just cover. Wait until the water is absorbed and check that the couscous has softened enough, then season it with gound cumin, cinnamon, ginger, chilli powder and paprika. This sounds like a lot but you just need a tiny pinch of each of them (I use the handle of a teaspoon to measure them) stirred through the couscous.

Add whatever you fancy out of tinned chickpeas, salad leaves (romaine lettuce or rocket is good here), diced red onion, cucumber and red peppers, tomatoes and chopped fresh herbs - parsley, coriander and mint are good ones. Dress with lemon juice and olive oil (NOT extra virgin - you want a less distinctive flavour) and season with salt and pepper to taste.
