Warm Salad of Potatoes, Sweet Red Onions and Oregano
Cook 8 medium-sized potatoes in their skins until tender. Drain and remove the skins immediately. Quarter them lengthways and place in a large bowl together with 2 small sweet red onions, sliced very thinly and 2tbsp pitted green olives, quartered lengthways. Add ½tbsp dried oregano, 8tbsp extra virgin olive oil, 2tbsp red wine vinegar and salt. Mix well and serve immediately.

How about a warm chicken & bacon salad.
Grill the chicken and bacon then throw then into a hot wok with a lttle oil and vinaigrette (how do you spell that) for 3-4 mins. Then turn off the heat but leave the wok on the hob. Then throw in the salad (whatever turns you on really, I tend to stick to mixed lettuce), but you could add some red pepper, onion, etc. Add a little more of the dressing (just to avoid spelling it wrong again) and toss the salad and meat together.
The warm oil & dressing will be absorbed into the salad without it going soggy. Serve immediately!!

Dear Bex thank you so much. that sounds really super. I always buy two or three different sorts of salad i.e. Red Pesto - soft lettuce and then a lollo rosso - very difficult to clean. If possible I also try and get some wild rocket. I always make a big bowl of green salad as I love it when it is,what we call in French, "fatiguee" - literally tired. I can eat it at any time of the day or night as a snack. According to Harraps shorter French Dicktionary your spelling was 100% "Vinaigrette". It means, not only a vinegar and oil sauce but also a two wheeled sedan. that I did not know!. Regards. AR1

You're very welcome . I was stunned to find myself commenting on a cooking area, probably one of my weakest topics. The only reason I happen to know about this particular salad is I went on a major diet a while ago (lost 4 stone too!) and needed to maintain sanity with food that actually had some taste and made me want to eat it.
Thanks for checking on the spelling. I could have gone and checked in the fridge, just didn't bother in the end.
I just checked out your personal space and couldn't help laughing when I read the bit about wheel clamping. Superb story. Was the policeman serious? Surely not.
