The secret to a good vinagrette is not to use just olive oil and balsamic vinegar. Balsamic vinegar is great for taste, being made of concentrated grape juice, but it's not actually got that acetic bite.
For a good vinagrette you need half olive oil and half vinegar, cider vinegar or white wine vinegars are both good (NOT malt vinegar!). Then add your balsamic vinegar, plus some fresh crushed garlic and optional chopped herbs. You can also add some mustard for extra taste. Mix the whole lot up and you have a truly fabulous vinagrette!
